The aim of this course is to obtain knowledge on:
- blue economy and food processing technologies and equipment, and their theoretical principles;
- properties and application of blue economy and food raw materials;
- devising and use of product recipes and product flow charts.

Õppeaine läbinud üliõpilane:
- teab sinimajanduse (nt kala, vetikad, molluskid) ja toidutoorme esmatöötlemise, kuumtöötlemise, külmtöötlemise, kuivatamise, konserveerimise seadmeid, tehnoloogilisi protsesse ning retseptuuride koostamise aluseid;
- kirjeldab sinimajanduse ja toidutoodete tehnoloogilisi omadusi;
- oskab viia läbi erinevaid sinimajanduse ja toidutöötlemise tehnoloogilisi protsesse, kasutada vajalikke seadmeid, koostada tooteretseptuure, tehnoloogilisi skeeme ja tagada ohutus;
- analüüsib tehnoloogiliste protsesside mõju toote kvaliteedile, säilivusajale ja toodete ohutusele ning nende reguleerimisvõimalusi.

After completing this course the student:
- knows the technological processes and equipment used in food raw material handling and processing (cooking, cold treatment, freezing, refrigeration, drying, preservation), and principles of devising of recipes in blue economy (fish, algae, molluscs, etc),
- explains the technological properties of blue economy / food products;
- is able to handle and run blue economy resources and food processing related technological processes; applies food processing equipment and technologies of blue economy and food products, and is able to develop product recipes, technological flowcharts and to ensure safety;
- analyses the impact of technological processes on product quality, shelf life and safety; is familiar with their regulation measure.

Kursusel käsitletakse järgmisi teemasid:
- sinimajanduse (nt kala, vetikad, molluskid) ja toidutootmise tehnoloogiliste protsesside ja seadmete teoreetilised toimimisalused ning nende praktiline kasutamine;
- sinimajanduse- ja toidutoorme koostise tehnoloogilised eripärad;
- sinimajanduse ja toidutoodete tehnoloogiliste retseptuuride, tehnoloogiliste skeemide koostamine ning tootmise ohutuse tagamine;
- sinimajanduse ja toidutoodete omaduste, säilivusaja ning kvaliteedi kavandamine.
Õpe on kombinatsioon teooriast ja praktilisest tegevusest laboris, koos erialase teaduskirjanduse lugemise, analüüsi ning esitlemisega nii suuliselt kui ka kirjalikult.

The following topics will be discussed:
- theoretical principles of blue economy (fish, algae, molluscs, etc) and food technologies, their practical application;
- technological properties of blue economy (fish, algae, molluscs, etc) and food raw material;
- devising of technological recipes of blue economy and food products, preparation and application of flow charts and food quality control tools;
- blue economy and food product properties, shelf life, quality and safety.
The study is a combination of theory and practical activities in the laboratory, including reading, analysis and presentation of professional scientific literature in writing and orally.
